4 bananas, peeled, sliced
4 onions, chopped
5/6 cup milk, scalded
1 1/4 cups hot water
¼ cup melted butter
Seasonings to taste


1. Mix all the ingredients together in a saucepan.
2. Bring to a boil on low heat. This should take about 20-25 minutes. Cool and strain.
3. Boil again the strained liquid for about a minute. Serve hot in soup bowls.

A Berry Banana Smoothie

Banana is very much a staple fruit of India. One of the great things about bananas is that it is not only delicious but is also cheap and available throughout the year unlike the other fruits.


Banana is a fruit which is still very casually consumed for its taste, texture and a feeling of fullness unlike other fruits which are eaten due to their much known health benefits. The masses definitely prefer it due to its low cost. With whatever feeling it might be consumed, banana is nutritious and a wholesome fruit. This is a much lesser recognized fact. Except for its limitations for weight loss and diabetes, like other fruits this one too deserves high regards.

Here’s an easy breakfast combining fresh fruit, yogurt, and granola or cereal. Feel free to use whatever fresh fruits are available, depending upon the time of year.


Ingredients


1 honeydew or cantaloupe melon, halved and seeded
½ cup fresh pineapple or kiwi chunks
½ cup blueberries
¼ cup lemon yogurt
2 bananas
2 tablespoons honey (optional)
1 cup granola or other crispy cereal

1. With a lemon baller or ice cream scoop, make melon rounds. Set the balls on a baking sheet and place the sheet in the freezer.

2. In a small mixing bowl, toss the blueberries and pineapple. Fold in the yogurt.

3. Cut the bananas in half, crosswise. Cut each of these halves in half again, lengthwise. Place 2 banana slices in the bottom of a cereal bowl. Top the bananas with the melon balls.

4. Add the pineapple mixture to each bowl. If using honey, drizzle it over the whole. Sprinkle each bowl with cereal.

Heavenly Taste of Banana Ice Cream

  1. To make your own banana ice cream at home it only takes about ten minutes. You can make a delicious homemade ice cream with just a few simple ingredients that can be found in most pantries and kitchens, namely whipped cream, bananas, lemon juice, sugar, and salt. Treat yourself, family and guests to a unique and lovely dessert with your own version of banana ice cream. This recipe does not require for you to use an ice cream maker. It may not be as smooth and fine as commercial varieties, but it is still completely flavorful and luscious. To make sure it freezes as smoothly as possible pass the ingredients through a fine sieve.

    Stirring the mixture after it has frozen for an hour and doing it a couple of times during the process of freezing is one trick to make the ice cream smoother and creamier. This way the sugar crystals that form which can make the ice cream grainy will dissolve. When making ice cream it is also important to whip the cream before adding it to the mixture. It should be as light and as fluffy as possible. To whip the cream until it foams and becomes puffy use a hand mixer or electric blender. This will help create a light and creamy ice cream.     Use freshly squeezed lemon juice for best results. It is best to use a citrus juicer to get the most juice out of a lemon. Using electric juicers are also ideal and can extract the juice efficiently. To release its flavor and loosen the juices roll the lemon using your palm over the top of the counter a few times before squeezing. While it is at room temperature it is best to juice the lemons rather than when it is chilled or has just came out of the refrigerator. To increase its temperature and extract more juice from it you can warm it up for 10 to 15 seconds in the microwave.

    1 cup fresh whipped cream
    4 peeled and mashed bananas
    1 1/3 tablespoons lemon juice
    1 cup white sugar
    A few grains salt
    1. Mix all the ingredients together in a large bowl.
    2. Pass the above mixture through a sieve. Then freeze it in a freezer-proof, covered container.

Banana Pudding                    

Ingredients
6 tablespoons all purpose flour

8 tablespoons granulated sugar
Salt
2 eggs (beaten)4 cups milk
Vanilla wafer cookies5 bananas (peeled and sliced)
9 oz. refrigerated whipped topping

1. Pour the flour, sugar, a dash of salt, and the eggs in a saucepan over medium heat. A small amount at a time, add the milk, stirring and cooking constantly until thickened. Cool completely.
2. Line a casserole dish with the waffer cookies. Layer the banana slices over the cookies. Layer the flour mixture over the bananas. Repeat until all the ingredients are used up, ending with the flour mixture.
3. Spoon the whipped topping over the whole and refrigerate until chilled thoroughly.

Mothers day is here and we want to share this day with our family, especially with our moms or the moms of the house.  It's good if we can celebrate it all together with them, cook up supper or ask your mom if she can cook your favorite soup or any of your favorite food you remember from your childhood, I'm pretty sure that would be a delight but don't forget to say thanks and ask for the recipe. Thinking on what to give your mom? Well in my opinion moms don't ask much about expensive gifts, just be yourself and please don't forget to greet your mom and say that you love her. Gifts don't have to be material things, it can be that you all visit her favorite hangout or just bond together through cooking or just help her in chores, it ain't much but you'll make her smile and happy and that's what matter most.  To see your mom happy also makes you happy definitely and make the most out of this day. 

It's mothers day so why not surprise your mom with this awesome dessert! With the complementary flavors of bananas, rum and caramel, this recipe is a real must try. This is an elegant and exquisitely simple dish after a spicy or rich meal to cleanse the palate and finish off a lovely dinner. To make this recipe, you need about two small bananas to a person. Here, the bananas are flambéed in butter and rum topped with grapes, pistachios, and pine nuts and served with a scoop of vanilla ice cream and caramel syrup. This dessert recipe is simple to prepare but extra caution should be taken when flambéing the bananas as the flare up is possibly dangerous. Keep a fire extinguisher ready if you want to be extra cautious. When done right banana flambé makes an exciting presentation and will liven up the end of the party. 


Bananas Flambeed with Rum and Soft Caramel

Ingredients
16 small bananas, butter
1 oz. (2 tablespoons) sugar
¼ cup milk
water
 1 cup cream
 1.4 oz. grapes
 4 vanilla pods
 pistachios
pine nuts
5/8 cup rum
syrup (made with equal quantities of sugar and water)
caramel (browned with butter and a little sugar)

1. Place the butter in a frying pan and heat. As soon as the butter begins to sizzle, place the bananas into the pan to brown them.

2. Add some warm syrup then add the grapes, pistachios, and pine nuts.

3. Add rum and flambé.

4. Place the flambéed bananas on a serving dish. Add a scoop of ice cream, a vanilla pod, and some caramel syrup to finalize the decoration.

When it comes time for your child’s birthday at school, and you are on the hot seat to deliver a yummy birthday treat to the class of 25, what do you say to eschewing those nasty store-bought cupcakes with the transfat this and the high fructose that and the ingredient list a chemist couldn’t decipher?
I have two words for you, and they are good words, careful words, wise words. Delicious words, in fact!


Fresh fruit kebabs make a healthy and colorful treat that can
be served as an appetizer or dessert, perfect for barbecue parties, summer picnics or weekend gatherings with friends and family. Adapted from a recipe from USA Weekend, Fresh Fruit Kebabs are a light and nutritious alternative to the regular fruit salad. This can also be served at children’s parties and potlucks.

The different colored fruits create a festive vibe and the different flavors and texture give a pleasant sensation and experience in the palate. Grilling the fruits intensify their flavors and caramelize their natural sugars, making them even sweeter. In this recipe, chunks of pineapple, green grapes, and large plums are skewered on bamboo or wooden sticks and grilled until tender. The fruit kebabs are served with a healthy and delicious dipping sauce of fat-free yogurt, honey, and lemon juice. Prepare and serve at least one skewer per person. Fruit kebabs are perfect for vegetarians at barbecue parties.

You can also use other kinds of fruits for grilling. For best results, use fresh fruits that are in season. Other kinds of fruits you can skewer and cook on the grill include apples, red grapes, strawberries, blueberries, cantaloupes, kiwi, and mangoes. You can also add cherry tomatoes in the mix. The fruits should hold their structure well and not be overripe so that they do not fall off the skewer as they cook. You can choose different colored fruits, forming the colors of the rainbow, for a beautiful presentation. Ideally, the fruits should roughly have the same shape and size so that they cook evenly. If you choose to add apples to the mix, lightly toss the bite-sized apple chunks in lemon juice to keep them from browning. Apples start to discolor the moment they are cut so work on them quickly.

Note:

  • Fruits (such as grapes, watermelon, apples, oranges, cantaloupes, mangos, blueberries, strawberries, raspberries, kiwi, pineapple, cherry tomato for a wild card!)
  • Wooden kebab sticks (one per person)
  • Special treat (such as mini marshmallow or brownie bite) optional
Cut fruit into bite-size chunks (do not cut grapes or whole berries). Thread fruit chunks onto wooden skewers. As you make each skewer, lay it down on a large tray. Once you cover the tray with a single layer of skewers, place a piece of waxed paper on top and begin your next layer of skewers if needed. This will keep them tidier than if you pile skewers on top of each other and the fruit starts getting entwined.

Ingredients

1 1/2 cups large fresh pineapple chunks
1 1/3 cups green grapes
2 large plums, cut into slices
8 wooden skewers
6 oz. plain, fat-free yogurt
2 tbsp. honey
1 tbsp. lemon juice, preferably fresh

Preparation Instructions

1. Skewer fruit, alternating fruit as you go.

2. In a small bowl, mix together remaining ingredients. Set aside.

3. Place skewers on a preheated, oiled grill and cook until fruit starts to soften and grill marks have formed, turning once, about 3-5 minutes per side.

4. Remove from heat and serve warm with yogurt sauce.
