Hunting Ducks and Cooking Them


Just as in any dish prepared in a slow cooker, crock pot duck recipes are convenient for the home cook and a family who appreciates a beautifully prepared whole duck or duck breast. Crock pot, which originated from a brand name of slow cookers in the United States, is now synonymous to the process of cooking food in low temperature for a very long period. The slow cooker is a great way to cook duck recipes. While the common way is to parboil and then roast the duck to get that shiny, dark brown crisp skin, a slow cooker can make things even simpler.

  2. Use a 6 quart crock pot for whole ducks weighing 4 to 5 pounds. In crock pot duck recipes, cooking time may vary according to your crock pot design. But the most common step here would be the preparation of the duck. For whole ducks, remove the giblets as well as the fat hanging from the cavity opening. You can remove the skin entirely before cooking but if you want to serve it with crisp skin, prick the duck all over to render the fat first. Rub the duck with salt and pepper all over. If you have citrus, garlic and onions, you can insert it into the cavity for flavor.

    To get the beautiful burnished brown skin, brown the whole duck in a sauté pan for 15 minutes on each side. You can also broil the duck later after removing from the crock pot. Into the slow cooker, put in the other ingredients such as onions, shallots, celery and other herbs and spices. You could also put in chopped apples and potatoes so that it makes a raised bed at the bottom with which you can settle the duck. If you have a little round rack that will fit into the crock pot, that will be helpful too. With its raised position, the fat will melt down the body and drip into the vegetables below. That means more flavor is soaked up by the duck and the vegetables.

    Black Ducks with Wine

    Ingredients

    1 black duck

    2 cups all purpose flour

    3 tablespoons butter

    Salt to taste

    1/2 teaspoon thyme leaves

    2 white onions finely chopped

    1 duck heart - chopped

    2 cups white wine – warmed

    2 scoops whipped unsweetened cream

    Preparation Instructions

    1. On a chopping tray chop the duck into medium chunks. Roll the pieces in the flour and set aside.

    2. In a saucepan heat some oil/butter and fry the duck until golden brown, turning often. After this add salt, thyme, duck heart, and wine.

    3. Cover and cook in a preheated oven at 350 degrees F for an hour. To this add cream and cook for another 20 minutes. Serve on a warm platter with the gravy from the pan.

Feb 24th is National Tortilla Chip Day. Another food holiday and who doesn’t love tortilla chips. Well, I’m sure some people don’t. But I love them. So on this day, eat as many chips as you want. Or cook something with tortilla chips. I couldn’t find any information on the origins of this holiday, but I did find some information on the origins of the tortilla chip.



History

The triangle shaped tortilla chip was popularized by Rebecca Webb Carranza as a way to make use of misshapen tortillas rejected from the automated tortilla manufacturing machine that she and her husband used at their Mexican delicatessen and tortilla factory in southwest Los Angeles. Carranza found that the discarded tortillas, cut into triangles and fried, were a popular snack, and she sold them for a dime a bag at the El Zarape Tortilla Factory. In 1994, Carranza received the Golden Tortilla award for her contribution to the Mexican food industry.

Tortilla chips are the quintessential and often complimentary appetizer in Tex-Mex and Mexican restaurants in the U.S. and elsewhere. Their popularity outside of California saw a steady rise in the late 1970s when they began to compete with corn chips, the dipping chip of choice during the first three quarters of the 20th century. They are typically served with a dip, such as salsa, chili con queso, or guacamole. When not served with a dip, the chips are often seasoned with herbs and spices. Although they are now available worldwide, the United States is one of the main markets for tortilla chips. Commercial brand names for tortilla chips include Phileas Fogg snacks, Tostitos, Doritos, and Don Tacos (in Japan).

So why not make your home made chips?  It's much more fun to eat food that you made and prepared right?

Ingredients

350 Gms tortillas flour
2 tablespoons olive oil
3 cherry tomatoes - chopped
1 tablespoon capers - drained
1 medium onion chopped
Black pepper to taste
1/2 cup good quality grated cheese
Salt to taste

Preparation Instructions

1. Evenly cut the tortillas into 4-5 medium sized triangles. Brush with olive oil on both sides. Place them on a baking sheet.

2. On top of the tortilla add some chopped onion, chopped cherry tomatoes and olives for each piece.

3. Add a pinch of capers and season with pepper. Sprinkle with cheese.
Towards end add salt to taste.

4. Bake in a preheated oven at 400F for 5 minutes. Serve hot.

An Unlikely Appetizer


A lovely alternative to the usual salad greens, banana and nut salad makes a light and nutritious appetizer and requires only a few ingredients and is simple and quick to make. To make this recipe, all you need is bananas, chopped nuts, lettuce leaves, and unsweetened whipped cream. You simply assemble these ingredients together and you have an elegant appetizer in no time. For this recipe use bananas that have a sticky and moist flesh as opposed to varieties that are dry. Bananas should be fully ripe for the nuts to adhere to the flesh.

You can use your favorite nuts to make this recipe. Cashews, pecans, almonds, walnuts, and pistachios all taste wonderful with bananas. You can also use crushed peanuts to make this recipe, which is reminiscent of the classic combination of bananas and peanut butter.


Banana is very much a staple fruit of India. One of the great things about bananas is that it is not only delicious but is also cheap and available throughout the year unlike the other fruits.

Banana is a fruit which is still very casually consumed for its taste, texture and a feeling of fullness unlike other fruits which are eaten due to their much known
health benefits. The masses definitely prefer it due to its low cost.  With whatever feeling it might be consumed, banana is nutritious and a wholesome fruit. This is a much lesser recognized fact. Except for its limitations for weight loss and diabetes, like other fruits this one too deserves high regards.
